Immune boosting soupToday, I found myself working from home along with the rest of my family practising “Social Isolation”.  The Coronavirus has spread globally and as at 23rd March 2020 we do not know of anyone who has caught the virus so fingers crossed going forward we all remain well.

I thought it would be a good idea to share my nutritional expertise online as our whole family has had to embrace online technology and will continue to for the foeseeable future.

I have recorded “lives” on my Facebook page before and also started cooking demos on my Youtube channel so thought this immune boosting soup would work well for all the family. It puts to good use any leftover vegetables, half used tins that you have in the fridge and I have added in some cupbord staples in the form of herbs and spices. After all whilst distancing ourselves we want to reduce the numbers of visits to the supermarket at this time and put everything we have bought to good use creating a little waste as possible.

You will need:
1 x chopped onion
3 x chopped carrots
1 x chopped sweet potato
Handful of spring greens chopped
Half a tin of chopped tomatoes
Half of tin of chickpeas
Teaspoon of chopped garlic (add at the end)
Teaspoon of chopped ginger (add at the end)
Teaspoon of turmeric
2 Teaspoons of herbs de Provence
1 litre of vegetable stock

Optional:
Add sweet corn
Add chopped cooked chicken pieces
Blend or leave chunky
